For a healthier meal option, try this pineapple chicken salad with balsamic vinaigrette, an easy recipe recommended by the Mayo Clinic and endorsed by Summit senior care provider Home Care Assistance.
Pineapple Chicken Salad with Balsamic Vinaigrette
4 skinless, boneless chicken breasts
1 tablespoon olive oil
1/2 cup canned unsweetened pineapple chunks, reserving 2 tablespoons juice
2 cups fresh broccoli
4 cups fresh spinach leaves
1/2 cup sliced sweet onion
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 teaspoon sugar
1/4 teaspoon ground cinnamon
First, dice chicken breasts and heat oil in a nonstick pan. Add chicken to the pan and cook until done. Next, combine the cooked chicken, pineapple chunks, broccoli florets, spinach leaves and sliced sweet onion in a large bowl. Then, in a separate small bowl, combine the olive oil, balsamic vinegar, reserved pineapple juice, sugar and cinnamon. Mix well. Finally, top salad with dressing and stir to combine. Serve immediately. Yields 8 servings.
A versatile recipe, this can be scaled up or down according to individual needs. Substitutions are easily made, allowing for a unique salad every time. Raspberries could be exchanged for the pineapple, romaine lettuce for the spinach, pomegranate juice for the pineapple juice or pork could be substituted for the chicken. Dressing may also be served on the side.
